The org I work for, who do the water and wastewater Treatment for this area, looked into similar methods, at least at the treatment plants.

Not sure whatever came of it.

That sounds clever, but I do wonder how a waste sample would reveal the hotel a person stayed at unless that hotel served some extremely unusual food.

Yeah, I found it very interesting that this article about Kando, a company from Israel, specifically mentions the technique being used in the US state of Massachusetts... but doesn't at all mention Biobot Analytics, a company that was in the news two months ago for using this technique in Massachusetts.
