ironically, i needed this to 'cleanse the palate', after the Fasci-dent church defiler thread above.  potatoes are comfort food, even in the form of comic relief.

The first time I tasted it was at some crap luau my friends wanted to go to.  That was all I needed.  Going to off-the-path Poke shops, I saw they didn't even sell the stuff.  That told me really quick that it was mostly for the tourists.

/goddamn, now I want some poke.

"tellie" is an abbreviation.

"mash" is a different word, and the part of speech is confusing.  Is it a verb, is it a noun?  Just like when Brits say "do" to mean "party".

Oh yeah, and they do the same stupid thing with ground meat.  They call it "mince".

Not "ground beef", or "minced lamb", or "ground turkey".  They just use the verb instead.

That said, I remember the first time I tried to make mashed potatoes. They came out a bit too runny as well.

It does have a weird translucent appearance though.

Twice baked is good and I will still do that in a Pyrex after mixing in all kinds of good stuff. But nothing beats the crispy skins fresh from the oven and carved out and given a little butter, salt and pepper. I bake the potatoes just over 400F so the skins get good and crunchy.

I love them, I'm just pointing out the concept is old enough to have a gazillion different versions, so you have a lot of kitchen wisdom to sort to pick out something even better than what you usually make.

/personally prefer gold/yellow potatoes than Russets, even for this recipe

One twist I like is to line the skin with par-cooked bacon like a second hull.  I've even done stuffed skins. Think stuffed peppers, but with tater skins.

Rocky road is nice, but sometimes a simple vanilla with sprinkles is satisfying.

David Lebovitz has a recipe for mashed potatoes that looks similar.  It has an insane amount of butter and is absolutely sinful.  Texturewise, I prefer mine slightly lumpy.

Yeah I prefer mine with a nice slightly thicker than softer serve consistency.
