It's incredible!  Just before ... what are we calling it?  Lock down?  Quarantine?  Anyway, I was lucky enough to snag a little Stilton and on a whim picked up some Shropshire Blue. It was really good, creamier than Stilton but still had a great sharp tang n' bite.  Turns out it may have been created a guy who was trained in making Stilton.

Good. Maybe the price might come down a bit. Just bought myself a wedge yesterday from TJs. Lovely taste. Even had it as my dinner last night.

https://en.wikipedia.org/wiki/Stilton_cheese
Daniel Defoe in his 1724 work A tour thro' the whole island of Great Britain notes, "We pass'd Stilton, a town famous for cheese, which is call'd our English Parmesan, and is brought to table with the mites or maggots round it, so thick, that they bring a spoon with them for you to eat the mites with, as you do the cheese."[9]

In Denmark I have bought it. Came in blue jars.

The price, 10-15 times Danish blue cheese. Hard to justify, but, good.

Does Trader Joe's sell Danish blue cheese? Happy to give it a try.

I like Stilton even though it is a bit pricey. Oddly enough, I think it goes very well with a type of commercial crcker called "Bacon Dippers", which allegedly taste something like bacon but go very well with the unctuous and rich taste of Stilton.

I guess that is my own private guilty pleasure because I imagine very few people have had the King of Blue Cheese with $1.99-$2.99 bacon crackers. It is like that time I bought the movie Seventh Seal (Stilton in movie form with Morons from Outer Space (bacon crackers in movie form).

What the Hell, I am a mess of contradictions. Like Walt Whitman said, I contradict myself? Very well, I contradict myself. I am large, I contain multitudes.

I dare you to try Stilton, with and without bacon dippers. It will be a revelation either way.

Now I must add Stilton to my shopping list, behind Kiwis and New Zealand lamb. And potatoes, of course. Lots of chips. The best ones are cut and deep-fried at home. I have a crinkle cutter for just such a continengency, but you can use it on carrots and cucumbers if you want something healthier, or even zucchini.

Dunno. In Denmark they do.

Here they go by their real name, Aldi.
