To freeze arugula, follow the same principle as other greens: blanch for two minutes, plunge in ice bath, pat excess moisture off, and place in an airtight freezer-safe container

Grow it yourself.

All the weed grow-op folks should do their part during this emergency, and start growing leafy greens, hydroponic cucumbers, bell peppers, and tomatoes.

Why not the farmers who receive billions in government bailouts? Shouldn't they maybe embrace new technology instead of forcing an industry the federal government punishes left and right to alter their business?

Vegetable processing is safer than meat processing by several factors, but doesn't mean its foolproof. I imagine these labourers are being packed into buses together, live in close quarters, and generally aren't given much of a chance for social distancing despite it being quite easy to employ.

Not to mention that they don't have good field sanitation - portajohns, no good areas for hand-washing.

As is well known, C-19 affects the poor the worst, so this is no surprise.
It's also an added bonus to take supplies from states that are tasked to "find their own". That this impacts California the worst, I'm sure King Mushroom got a chubby for at least 37 seconds.
