I strongly dislike tuna hot save in my mother's tuna and noodles but sadly as she never wrote down the recipe it went o the grave with her.   My attempts to recreate it have yet to bear fruit.

Oil-packed tuna.  Sourdough bread.  Extra-sharp cheddar.  And use a real f*cking oven.

Water pack albacore, dukes mayo, little Dijon, red onion, parsley, little diced celery, S, P. The best cheese is provolone.

water or oil packed tuna, it's all good. Make sure either Italian or Albacore. Mix with mayo, dijon, whole grain mustard, parsley, red or green onion, old bay, maybe some pickle relish, pack on bread with shredded cheese of choice, drizzle EVOO in pan, whole sandwich in pan, press down like a panini with spatula few minutes until you see cheese melting, drizzle top side with oil, flip, press. always cut diagonal.  Got my picky daughter to love this sandwich.  For the bold, open up and throw on tomato slice, pickled jalapenos, other sandwich toppings.  One of my all-time favorite sandwiches.  Subby can choke on my tuna breath.

You know that's one of the symptoms of COVID-19, right?

Supposedly it binds using something that's common in the cells in your nose.

But to keep this back on topic -- I'd agree with the 'ewww'.  You need to mix the (drained) tuna and mayo together, then heat the whole thing in a toaster oven so you can get a little bit of browning on the cheese.  (we always made ours open-face ... usually on something like a halved french bread roll.)
