I once found a recipe for whipped cream made from 1.25 cups of heavy cream and one tablespoon of cider vinegar mustard.  It was to be used as a condiment for goose breasts that had been brined, simmered until fully cooked and soft but not falling apart, then cooled to room temperature.

I've never been brave enough to attempt that recipe, but according to legend, it was once served as part of the main course at the Nobel Prize banquet.

It's fun, worth a stop if you're in the Madison area.

The local Culvers makes mustard custard for the Mustard Museum's National Mustard Day festival every year. It's...weird.
