I've apparently been using this recipe for years. https://www.geniuskitchen.com/recipe/better-than-olive-garden-alfredo-sauce-141983 Not sure which one was out first though.

It's definitely good but then again how could anything that is basically all fat and cheese be bad.

Y'all are making this way to complicated

1 lb of fettuccine
1/2 lb butter
1/2 lb grated parm (plust more to make life even better)
Salt and pepper to taste

Cook the pasta as if you knew how to properly cook pasta. While that's cooking, melt the butter in a pan on medium heat. Once the pasta is done, drain but reserve the water. Add the pasta to the pan with a bit of parm and a splash of pasta water. Heat to a simmer and vigorously mix with tongs. Keep adding parm and mixing (You need to mix, damn it! Mix!), adding an occasional splash of pasta water to keep the mixture at a creamy sauce-like consistency. Continue until all the parm has been added. Finish with salt and pepper to taste.

Hypothetically serves 4 - 6, but let's face it - you'll eat it all on your own

This stuff is punch-your-granny-good and you didn't have to wrangle sixteen ingredients or get anxious over a roux

I am not sure what was in TFA but it sure as shiat aint Alfredo. poorjon's recipe is the real deal. Add cream and nutmeg if you feel like it, but original Alfredo didn't have them.

That recipe in TFA just seems like a waste. The garlic, olive oil, and mozzarella should be pulled out of the recipe entirely. Make cheesy garlic bread if you need those flavors but that seems like overkill if you are already having pasta Alfredo.

I don't know. I can see a place for garlic and olive oil in a version of Alfredo. But I'm right there with you on the mozzarella. I don't see why anyone'd want that in there.
