I rate this recipe as 5-stars. I did switch out the chicken for pork and added jalapeños instead of the red bell pepper. Just in case I develop a tree nut allergy in the future, I also left out the cashews. Got to be careful these days.

I get so tired of seeing that kind of comment for recipes - "I loved this recipe, but I decided to make something completely different and discuss it here."

It's even better when they rate the recipe poorly.  1 of 5 stars, I replaced the chicken with frozen chicken nuggets, and used canned carrots and peas instead of the fresh vegetables.  It tasted like despair, your recipe sucks.

Maybe people just like trolling recipe blogs?

This recipe is SPOT ON.   I did however replace the ingredients with a box of Kraft Mac and Cheese.   ... Will make again!

I prepared in my crockpot and it came out kind of mushy and ruined my daughter's quinceanera. Would not recommend this recipe.

Cashew chicken was invented in 1963 by David Leong at the Grove Supper Club in Springfield, Missouri.  Which is nice.
