My favorite summer soup is to take a fifth of Everclear, some lemon lime soda and a gallon of ice cream and put it all in a cooler with a spigot on the bottom and sit in the shade in the back yard.

There's a catering place nearby that sells homemade high-quality frozen soups by the quart thick with the ingredients. Vegetable-minestrone, barley-lentil, chili-sirloin, tomato-bisque, brunswick stew, you name it

Gazpacho using home grown tomatoesBlended until smooth, none of this chunky stuff

2 pounds ripe tomatoes, halved and cored*
1 small (1/2 lb) cucumber, peeled and seeded
1 medium green bell pepper, cored
1/2 small red onion, peeled
2 small garlic cloves (or 1 large clove), peeled
3 tablespoons olive oil
2 tablespoons red wine vinegar
1 teaspoon fine sea salt
1/2 teaspoon black pepper
1/2 teaspoon ground cumin or curry powder
Directions:
Combine all ingredients together in a blender or food processor.  Puree for 1 minute, or until the soup reaches your desired consistency.  Taste and season with extra salt, pepper and/or cumin if needed.
Refrigerate in a sealed container for 4 hours, or until completely chilled.

Unfortunately, my wife - who loves ripe tomatoes - does not like Gazpacho

I keep chicken broth and frozen vegetables on hand so I can make soup on a whim. It takes about as long as making a sandwich. Here is the simplest version plus a summer variation with basil or oregano.

Quick chicken soup
Ingredients:

-- Chicken broth
-- Frozen mixed vegetables
-- Pepper and salt to taste
Directions
-- Combine and heat

Summer quick chicken soup
-- Chicken broth
-- "Normandy blend" frozen mixed vegetables (the zucchini makes it summery!)
-- Basil or oregano (oregano is stronger, go easy if you choose it)
-- Salt and a little pepper
Directions
-- Combine and heat

Options to fortify either soup
-- White, kidney or black beans - rinse and drain canned beans, add to soup
-- Rice (cooked before adding to soup)
-- Noodles (cooked before adding to soup)

I thought there was a (French?) soup that was heated gazpacho. Same ingredients, the only difference was the temperature.

DOH! Nevermind!

As I clicked no "Add Comment" I realized I was thinking of vichyssoise - potato-leek soup that's superbe hot or cold.

I'm not going to see a fresh local vegetable until mid June, and that will be something lame like broccoli.  The only good broccoli soup has way too many calories.  Next up, maybe carrots?  Not a carrot soup fan.  So, maybe by July, I can make a nice roast tomato/red pepper soup.  I think of that as more of a fall soup really.

So, I have nothing to add, yet here I am.

Asparagus is one of those things I only eat to be polite.  I don't exactly hate it.

I love asparagus. I've got a friend with a farm in Michigan who brings me bags full when it's ready, just giant stalks of the stuff that puts store bought to shame. Bit of salt, olive oil, and toss it in the grill, and I'm peeing asparagus smell for weeks.

I just finally nailed (after many tries) the recipe for Carrabas sausage lentil soup. Not sure if everyone is familiar with it and how good it is.
I used a more spicy Italian sausage...
Some crusty bread and grated parm on top....exxxcelllllent..
Small dice carrots, celery, red pepper, onion.  Saute in Olive oil
Chop up some garlic add to oil
Cook Sausage in another pan till brown, drain 1/2 the fat.
Add Sausage to veggies
Add tomatoes
Add Chicken broth
Add pre-cooked lentils ( I used trader joes)
Salt
pepper

I love my instant pot for soup... I have recently gotten the most drop-dead simple quick soup - cubed butternut squash (frozen is fine, I usually use a fresh one), a half cup of tomato sauce (if using frozen, otherwise a cup), and enough chicken broth to just barely cover the lowest point. Pressure for 8 minutes, quick release. put a stick blender to it and season to taste (I personally use a whole crap ton of pepper, thin shaved garlic, and whatever spices strike me - cumin, red pepper flake and dill are my favorites.) It's very low calorie for what it is, and you can do a very big pot cheap.
