Nothing of value was lost; just a bunch of limp pork drowned in vinegar. Real BBQ is Western N.C. / S.W. VA / East Tennessee BBQ.   Take that vinegar sauce and mix it with a too-sweet Memphis tomato-based sauce, and you have BBQ perfection.

Big fan of BBQ. I don't care were it comes from, or how it's made, what sauce is used or a dry rub, I couldn't give a fark....

Chicago, Texas, NC, Memphis, etc. It's all good.

I'll even eat Mongolian BBQ and Koren BBQ!

Let's be honest, Wilbur's is about where Bill Ellis BBQ was post-Hurricane Floyd.  It's passable BBQ relying on it's name and reputation from 30 years ago.

If you want proper BBQ, you want B's in Greenville.  If you want upscale, Skylight Inn in Ayden.
If you want to have to loosen your belt at the table, Parker's in Wilson, family style.
If you want brisket, go to Texas.
If you have no taste, there's KC and Memphis styles.
If you have no sense, there's SC mustard and Alabama white sauce-style.

I used to go to their first location in Rosslyn VA, back in the day when you might find Lee Atwater hanging around the bar.  For Memphis Style Q, it was really good in the beginning.  Then they went all full blown chain, and the quality dropped off.  It's still better than truck stop BBQ, but not always by much.

Actually it's pretty good. There was a guy trying to review every BBQ place in NC. He rated it pretty highly and said he was amazed when he realized it was a chain. The other chains that put out good Q are City BBQ and Old Carolina.

Cool....I worked in Rosslyn back in the day. But living in Fredneck, MD. Where we had one right around the corner from my house. Which meant I went there once a year because when my folks drove down from NY, they wanted BBQ (southern style)
