It's another one of those things where I wonder whether the statistics mean that the processed meat causes the increase in risk or whether the lifestyle habits of people who tend to eat processed meat is otherwise linked to increased risk. I don't pretend to know.

Eat it all at animal slaughtering time as grilled/bbq/roasted meats in a gigantic Bacchanalian feast.

Render the fat out for eating with vegetables later.  Never heard anything bad yet about cooking up your beans and veggies in lard.

Note also that in addition to nitrates in plants being fine while somehow being deadly carcinogens in meat (even when those nitrates are added to the meat as plants e.g. celery powder), the percentages quoted are relative percentages, not absolute.

As I recall, the terrible, deadly risk of eating vaguely-defined "processed" meats seems to increase the chance of getting colon cancer from about 5% to about 6% in absolute terms, according to the studies they're getting that from.

I don't actually have any trouble believing that a lot of crap that ends up in industrial meat-products may be bad for us, but this particular oft-repeated factoid seems poorly-supported.

Yes, let's ignore the research that stresses that nitrites and nitrates form with meat to create carcinogenic compounds like nitrosamine and misrepresent what they actually claim.

ok, so why don't they recommend not cooking any kind of veggie + meat dish?  you know, stews, stir frys, chili, omelets, casseroles, broths, roasts, soups, sauces, ... basically most of every cultures cuisines in the world.

the RR is so low it can be disregarded as statistically insignificant.  the entire write up in the link could have been simply "conclusion: got nothing" but that wouldn't get them more research funding.
