One can replace the eggs and oil for a typical box cake mix with an equal volume of mayonnaise and be safe from salmonella concerns. As long as the mayo is fresh, there won't be any mayo-ey taste, just the moistness.

This trick works for a lot of things, especially when you were already mixing in a bunch of sugar/other stuff anyway. Just don't forget to label the regular mayo from the garlic mix.
