How about stop giving billions and billions of dollars to every farking corn farmer and feedlot who needs tons of antibiotics b/c cows aren't farking supposed to eat corn? Try that first.

They should tax kale instead of bacon.  Bacon is a lot healthier than kale and before you snicker and giggle "I wish", the science backs it up! here we go:

The nutrient priority for humans is Fat -> Protein -> Vitamins/Minerals
1oz bacon contains 11g fat and 10g protein
1oz of kale contains < 1g of protein, and nearly 0 fat.
winner: bacon
Humans can straight digest animal products with their digestive enzymes and fluids.  Plants, especially kale with its high undigestible gibers, not so much.  Result is the bioavailability of nutrients in bacon is near extremely high whereas kale is < 10%, and in some cases like iron as low as 2%.

Negative health effects of bacon are none, provided you are getting quality sourced bacon and not processed crap.  Kale contains goitrogens which wreck havoc on human thyroid function.

kale isn't even real.  it's a man-made cultivar whereas bacon we're been eating for 2.5 million years.

Don't they use nitrates/nitrites from celery now? If the nasty chemicals used to cure meat can be found in vegetables, doesn't that mean we have to ban vegetables first?

The whole reason eating meat makes sense from a sociobiological perspective is that we humans can't eat grass.  Some land you just can't grow the kind of plants humans can eat, but you CAN let livestock feed on it, and then we can eat the livestock.  In a way they are processing the grass for us and converting it to a form we can digest.

Feeding livestock on things humans can eat is incredibly wasteful, from a land-use point of view.

Yeah, sin taxes don't work when the overwhelming majority of people openly and proudly commit the "sin".  Furthermore, a processed meat tax would be very regressive.

Yep, years of advertisement convinced a generation that pork was white meat. It's a lie. Pork is red meat. It is as bad for your heart and all that junk as beef. It's not some magical healthy white meat that's safe and pairs well with reds too.

Well good news, that part of you can live again!
There actually has never been an established link between red meat and heart disease or cancer.
Processed foods, be it low quality meat, grain, or sugar heavy are the problem.
Grass-fed beef is top tier for human health.  This is where the entire ancestral/primal/paleo style diets stem from and the science backs it up.
