Tastes changed.  The Americanized sit-down Mexican restaurant chain (Chi-Chi's, Rio Bravo, Casa Gallardo, Don Pablo's) is a thing of the past.  I'm surprised they lasted this long.  Americans are comfortable with local order-by-number Mexican places now.

Well, where will people in California get Mexican food now?

If your Mexican restaurant isn't slightly dirtier than you like, it's not authentic.

Haven't had good Carne guesada since I left Texas, it's a real shame.

There's a lot of minor variations between (and even within) all the Latin American countries so if you're telling me one way of braising seasoned beef in tomato sauce is more authentic than another, I kind of think you're crazy.
