Nothing better for those nachos from my youth. Yeah, I know "Pasteurized Processed Cheese Type Food" but still, one block of Velveeta and one can of Rotel, melted in the microwave, some left over ground beef, cheap dinner for an Air Force Buck Sergeant his wife and two kids in a "never realized we were broke" household.

Beechers Flagship smoked cheddar is really good. But it's hard to beat a good triple cream Brie with rosemary crackers.

Depends on what for.

On crackers or grilled cheese, a nice sharp cheddar.

On pizza, a mix of Parmesan, Romano, and Mozzarella.

On a cheesesteak, either Mozzarella or Provolone.

Under no circumstances whatsoever should "Provel" be considered a cheese.

Go to a cheese factory early in the morning when they are making curds. Buy a bag as soon as they're ready.

Otherwise, I am used to having brick cheese and enjoy it with breakfast.

I'm not a fella that eats much chesse, but An amish place in southern indiana makes a ghost pepper cheddar that straight up is the best thing I've ever eaten on a burger.  Just put that cheese and a couple strips of crisp bacon on it and you're in heaven.

I will eat any type of cheese (within reason, no active maggots thanks), so I have a hard time calling up a "favorite", but it makes me very happy that the only reason Wensleydale cheese even exists anymore, let alone the only reason that I've been able to eat it, is because of Wallace and Gromit.

Apparently the arbitrary decision to use Wensleydale because of its fun name probably saved it from disappearing entirely.

I like my cheddars sharp, my swiss holey and my havarti with dill.  But ask me to pick a favorite and I'll lock up.

/don't care for pepper jack at all, though.
