Um...whiskey is the one thing that America has been DEEP into for a long ass while. Like religiously. Don't get me wrong, I think it's great that more folks are thinking about giving it a go, but bourbon and rum are kind of what made America what it is. Well that, and the quality of our hemp and cotton. If folks in Seattle want to give it a go, then I'm all for it, because...bourbon and other whiskeys are fun and delicious, but let's not pretend it's some new frontier, because we were doing it when there WAS a frontier in this country, and Seattle wasn't even dreamed of, save as a name that came up with the Duwamish and Suquamish tribes...and only that as a bastardization of the few folks who'd pushed out that way...

Yeah, I would hardly call this hipster.  Now, if he was going to make the scotch with smoked soybeans using only artisan firewood then it would probably be hipster.  All this guy is really doing is making an American scotch using American ingredient.

Old news. Craft distilleries have been producing whiskey for quite a few years. They started off pretty shabby but have improved immensely.

Aside from a few from Buffalo Trace Distillery, I'm failing to see the underlying taste profile. Looks like the Weller 12 stashed in the back is the best you got, imo. I'm drinking A Mid Winter Night Dram tonight. It's delicious even if it's an MGP.

IMO, the 101 is perfectly cromulent. It's not top-shelf, but it's a good, solid value. I'd love to try out some of the craft whiskeys out there, but there are two main problems:

1) figuring out which ones are worth drinking
B) separating real distillers from the independent bottlers/blenders, and them from the bullshiat artists

I stopped collecting back during the 2008 financial meltdown, but I still have a fair number of Buffalo Trace Antique Collection bottles to work through. I think of George T. Stagg as "bourbon concentrate" - you really have to dilute it to normal drinking strength for the best sipping. Though I use a Glencairn for sipping, one of these can be real handy both for dilution and cocktail mixing:

I mixed a couple of Manhattans with 140+ proof Stagg a long while back - just about knocked me on my ass. Even under the vermouth, bitters, and melting ice, the Stagg flavor profile shone right through, and it didn't taste harsh at all. Danger Will Robinson!

Stagg Jr jumped the shark in 2017. Don't overlook what shine "blenders/distillers" are doing. High West makers good juice from MGP and so does Hillrock (to a MUCH lesser degree), but there are others. There's a shortage of good true distillers out there, no doubt, but don't snub your nose on a decent bottle just because. Now, I say this but I will NEVER buy a bottle of Whistle Pig simply due to the ties to the Apprentice and  The Donald. But that's just me, I hear they make ok juice.

Yes I did, they look like a bunch of old bottles of booze. Some emptier than others. I can see collecting full unopened bottles of something rare as an investment but otherwise what is the point?

That's a nice collection, but isn't most of that just going to oxidize before you finish it? Btw, you need more scotch in that collection.

Liquor doesn't oxidize at nearly the rate as some nerds might claim, nor does it have a hugely noticeable affect on the taste.  It's not like we're talking about wine.

Never been a big fan of scotch.

2 questions, have you had the Jack Daniels Gold (if you even care for JD), and do you think Angels Envy rye is too sweet/over rated (just my opinion wondering if anybody else shares it)?

I have been buying Russel's Reserve for my "good" bourbon for a while now, but recently discovered Four Roses Single Barrel and will be switching over once my bottle of RR is gone.  I keep a lot more Scotch whisky in stock than anything else, but always have a couple of bottles of bourbon and Irish.  Even have a couple Japanese, Taiwanese, and French bottles at the moment.

Never tried JD Gold.  It has good reviews but most seem to agree it's a bit overpriced for its quality.   Angel's Envy rye is good, especially if you're not a rye fan.   The taste of the casks really comes through on it.

They get stale within a year, I've found. And you're drinking the wrong scotches.

That has been a concern; haven't noticed any difference myself.  Done a fair amount of research, seen everything from purest who claim you have to drink a bottle with in days to people who claim a decade.

However, I've decided to not open any other bottle until I get down to 10 or less bottles, out of paranoia.

I need to keep reminding myself never to buy one of these god damn 75% alcohol by volume "barrel proof" type whiskeys again.  Like you said, they're just so damn concentrated and strong it's not really enjoyable.

That's the thing with "barrel proof"/"cask strength" though. You can water it down to your taste and you end up with more booze for your buck.
