Curious how it does it. Looks circular, cutting on a flat surface. Or is there a small gap it success through, and the slice falls onto a belt?

Beautiful either way. Brings a tear to my eyes.

my guess is there is a relief channel in the blade to combat build-up of fat.

Ah, I see it now. The meat is raised a bit, gets cut and drops down. The blur makes the blade look much larger than it is. Might be a scraper that makes sure it doesn't stick.

Also guessing the meat is really cold to help keep fat from building up.

How can I put this in my garage..

If you ever get a chance do yourself a favor and watch the Hormel Meat Processing Plant short from Rifftrax. It's very very very relevant. Takes you on a journey from a live cow going in the stockyard door to delicious cans of Hormel Chili hitting the store shelves. Did you know there's a machine that can skin the hide off an entire cow in less than 10 seconds? Also their bacon slicing machine may not be as fancy as the one in the article (The short was shot in the 40's) but it slices that bacon just as thin or thick as you want. They also teach you how to make canned ham.

Homemade bacon is easy to make and is superior to most store bought bacons. Plus the same techniques can make hams too. Homemade brined smoked turkey breasts make sammiches for the gods.

So it's a weed-whacker?  That's what it looks like to me.  I don't think that's a blade, I think it's nylon string.
