So basically every zombie you killed in The Last of Us was actually coldblooded murder of a sentient person who was just being marionetted by the cordyceps.

Pretty close. It's a vampire plague in that case, but they can cure some of the ones infected. And the cured ones have full memory of what they did. One of the characters ate his wife and little children. Some of the people who turn are still sentient and have their own agency, colored by the need to feed of course, others are more animal-like - basically fast zombies.

For that matter re-souled vamps in the Buffyverse remember everything they did too, but there's only two of them. In both shows they talk about it being better in some ways when they were the monster because being the monster meant they didn't care.

I did really enjoy it at the time, but I have to say that as I play 'Dead Island' now I see it in so much more of a positive light. So many games in the zombie genre are just terrible...

I've been watching that new Marvel series called Legion, it's based on a mutant(supposedly Prof X son?) with super mind powers but he also suffers from scizophrenia, a couple episodes into the series it's learned he also hosts another mutant that acts sort of like a zombie ant type organism and may be the reason for his scizophrenia, it's pretty good, good music.
