Also smash them flat as soon as they get out of the oven.  I don't know why, but it makes them stay chewy forever.

I wonder if N-M's cookie monsters considered what happened with Mrs. Field's.  Urban legend says
they offered a customer a copy of their cookie recipe for $2.50, and the customer was actually
charged $2500, prompting the angry woman (it was a woman) to make multiple copies of the recipe
and sell them to her friends.
