We've reached peak kale.  Maybe now at least we can wake up and start creating solar-generated leafy greens, not trying to extract it from the huge reserves of underground oil kale..

In a wok, sautée an onion, several mushrooms, and a couple cloves of garlic.

Fill the wok with chopped kale. Put on the lid (stirring enough to keep it from burning) until it begins producing its own water. Continue to cook until it has cooked down completely.  Season with lowry's seasoning salt, cavender's "Greek" seasoning, and a bit of unsweetened ginger to taste.  At the very end, add 1/2 can of coconut cream.

Kale isn't that high in iron... It certainly isn't higher in iron than beef like the article claims.

http://nutritiondata.self.com/facts/beef-products/6193/2   90/10 ground beef raw: 100 g = 12% RDA for iron

It also isn't all that high in fiber... 67 g has 1 g of fiber... Beans have a farkload more than that.

Obviously there's no accounting for taste, but if your standard for palatable greens is "raw" you might benefit from trying something other than boiling.

Came to say something similar.

Kale is ridiculously easy to grow though (of course you need the seed, which is a problem according to the article), as are most greens, which is why those CSA boxes are so goddamn full of greens instead of other vegetables.

Also, not everyone has an easy time absorbing the iron in greens.  Give me red meat please, and all the fat soluble vitamins it contains.

I never really liked kale, just ate it because it's healthy. Then I started eating things like yu choy and bok choy which not only taste much better, they are also healthier.

Big on collards, also. Although, spring turnip greens are my favorite-I have turnips growing right now in anticipation of next spring's greens. The chard and kale run from May to December for me, but turnip greens (from overwintered turnips) show up by late March or so.
There have been years when the chard (and sometimes spinach) survive the winter, producing even through snow and freezes of January and February.
