I really wish restaurants did what I do at home to do sandwich-like food.

Two slices of American cheese, laid on parchment paper (temperatures will be too high to use wax paper).

Microwave on high for approximately 1 minute.  Depends on oven power and how moist/think the cheese is
(I typically use 1 minutes 11 seconds  ( timer 1-1-1 start)

It will melt and poof up, and if you hit the time window right, STAY poofed.  Too brief, you have a puddle,  too long and it is extra crunchy.   Use feedback to adjust cooking time next time you make some.

Remove from oven and let cool briefly.   (Pulling the paper out of the oven onto the counter lets the counter soak up the heat)  Only a few seconds needed.     If you wanted, you could make taco shells while they were still flexible.

 Use poofy slices similar to cheesy bread

Put that fatburger between two poofs.   Perfectly burgerlike.   If you hate cheeseburgers though, sorry.

/for some reason american cheese seems to work best.   Swiss can be OK, but tends to be greasy.  Mozzarella is sort of the same.    But you can do a nice fake pizza.   Poof a thin layer of grated moz.   it'll be thin, but if its a puddle it needs more time..   Put on more moz and toppings (and sauce if you are into that).   Microwave a bit more, but not enough to poof the new cheese.  Chewy cheese/toppings on crispy cheese poof. Pizza.

What happens is the other cheeses aren't emulsified.  You could resolve that by melting the cheese with either milk or water and adding sodium citrate.  It's the emusification component used to make American cheese melt the way it does.  I use it to make the most ridiculous cheese sauces.

I used to do what you speak of by microwaving the American cheese while it was still in the wrapper and using them as like really big Cheez-its.  Sadly, the manufacturers changed something in the wrapper and now the plastic melts and adheres to the cheese.  Probably shaved a few microns off the thickness, saving .000001 cents  per slice.

A burger with no bun is actually pretty good. Most people never try a hamburger with no bun, but they should. You can really taste the meat. Bread tends to overpower the flavor of most things.

And eating spaghetti and meatballs without the spaghetti really allows you taste the meatballs. A sandwich's greatness is the amalgamation of its parts. If the bun is overpowering your burger, you are eating a shiatty burger so don't blame the bun.

I just wrap mine in large romaine or green leaf lettuce leaves. After a few practice tries, I got to the point where it made a perfectly serviceable burger.
