Not all breads baked with white flour are 'white bread'. 'White bread' infers Wonderbread and the like - cheap, lacking in character, and not good for much beyond BBQ and kid's lunches.

Brioche, sourdough, baguettes, etc, while baked with white flour, are far more palatable.

No, I am one of those people that believes in the laws of thermodynamics. A kilo-calorie of fat contacts the exact same amount of energy as a kilo-calorie of sugar. Which makes sense since a kilo-calorie is a unit of measure of energy.

People who clamor on about about how sugar makes you fat don't understand what they are talking about. A diet high in refined sugars cause insulin fluctuations that may lead overeating. It's the overeating that makes you fat not the carbs.

My personal experience is a low-anything diet is stupid. A balanced diet with regular exercise is key to maintain a healthy weight.

Besides, high fat, lo carb diets don't violate any laws...they just turn off your appetite so you aren't as inclined to overeat. Hence, you lose weight. Nice benny, but the real benefit is what it does to your blood sugar, trigs, cholesterol and other blood chemistry. My results were typical. Within 6 months by fasting blood sugar dropped from 106 to under 80. My trigs from 300 to 80, and my cholesterol from almost 300 to 145, while my good cholesterol rose from 50 to 80. Liver function improved. Blood pressure dropped. Libido improved. Oh, and I lost almost 50 pounds, dropping from obese to normal. What's not to like?

A calorie may be a calorie regardless of source, but the human body processes different sources in different ways.  As you mentioned above simple carbs and sugars can lead to insulin spikes, which in addition to causing overeating can slow down your metabolism.

One of the benefits of an extremely low carb diet is that your body enters ketosis where it's deriving energy from directly burning fat instead of sugars, which can help raise metabolism as well as target the fatty areas that most people diet to reduce.

If you eat 5,000 kcals of steak and only burn 2,000 yes, you'll still gain weight, but if you eliminate the sugars and starches from your diet you can raise the rate at which your body burns calories.

I don't think anyone here is shilling for anything.

Asians eat a very low calorie, high carb, low protein, low fat diet.

The French eat a high fat, low calorie, moderate protein, high carb diet.

Italians eat a moderate fat, high carb, low calorie, moderate protein diet.

Americans eat too much. And they don't move. It's really not rocket science.

this is the same situation that marathon runners get into when they run out of blood sugar, which the body can only harness for a limited amount of energy before having to switch gears

now, there's a lot of weird 'low-ish carb' diets that don't explicitly attempt to induce ketosis which are pretty much nonsense, but atkins specifically designed his diet around inducing that state. and while there are questions about the long term health implications of long term ketosis, only the profoundly uninformed would deny that it is a thing
