This kind of eye behavior can be modeled pretty well by putting a ball in the middle of a round thing shaped like an eye socket, attaching it with springs to each side, and then bouncing the eye around in there. Note that this is not because the muscles (which is what you're thinking of) behave chaotically like springs: it's because the brain controlling those muscles is making the muscles act like that. The muscles are fine and undamaged, but the nerves controlling the muscles are feeding them crazy instructions.

Male and female students from the University of Geneva viewed a series of black-and-white photographs of persons they had never met. In part one of the study, participants viewed photos of young, adult heterosexual couples who were looking at or interacting with each other. In part two, participants viewed photographs of attractive individuals of the opposite sex who were looking directly at the camera/viewer. None of the photos contained nudity or erotic images.

Ok, I know I'm going to be "that guy," but the methodology bothers me.  This kind of eye tracking is wonderfully generalizable if we lived in a 2D world.  We don't.  And it works great if there was no other real-time, live interpersonal interaction when we went on dates/ had natural meetings that could result in potential relationships or sex (or at least erotic interest).  But generally speaking, these interactions happen in person.  From my perspective (no pun intended), it's too big of a leap to extrapolate how we react to photographs to how we react to people... especially as people move.  For most heterosexual men (raised in US culture at least), things like a woman's hair and breasts can be erotic, but often it's how the hair moves or catches the light, or how the breasts move as the woman moves (or breathes, really).  Lips can be erotic, but the real effect happens as they move as well.

Not to mention the social and practical elements.  Let's say you work with someone you find really attractive.  You can comfortably stare at a good picture of the person that's been posted to Facebook, but you can't stare the same way at the person in real-life.  The gazes will likely differ in timing and pattern.  And this doesn't even approach the topics of self-confidence, and the actual relationship between the observer and observed.  If one is a boss and the other an underling, the gaze could be qualitatively different than between two co-workers.

There are just too many issues in the jump from picture to real-life to claim much external validity.
