Shark Brand is less sweet and has a more pronounced garlic and pepper profile.
But it's all good, as far as I'm concerned.


Sriracha Panich, which is the original Sriracha sauce and has something like 60% market share in Thailand, is now available at Cost Plus World Market.  Although my favorite is Aroy-D's version, but its super hard to find anywhere since Rooster Sauce took over.

I love most of the sauces from Tijuana Flats. Currently working through a bottle of Hot Damn. Great flavor but not very spicy. I'm going to keep looking for something with that taste but with more heat.

Texas would also suck their collective dicks in lieu of charging them taxes for about a decade.


They aren't going to move to Texas - and no - it wouldn't have been a smart move for them.
Among other things, the peppers they need fresh don't grow there, and it would take years and lotsa capital to gear up an operation. Meanwhile, trading high income taxes for high property taxes will only benefit them a little,
They are a pretty good corporate citizen, and wouldn't benefit from the lack of regulation - indeed, it might be hard to fins a place to grow their peppers in an environmental nightmare like Texas.
And, of course,  they would need a new workforce. Nobody is going to follow a moderately paid job to someplace nobody wants to live.That's why the guy doesn't want to move, and won't.
The company never seriously considered moving to Texas - that was just Rick Perry shooting his asshole off.

I like it because it's thicker than Tabasco, which is just spicy vinegar. For sandwiches, sriracha and mayo is almost unbeatable. If I want to spice up a pizza, I'll use Tabasco or Cholula. I've never understood why people dedicate themselves to one hot sauce. That said, I do need to expand my horizons.


My cupboard currently has Tabasco, Sriracha, Frank's and three different kinds of Cholula. With you.

Guy I know was chopping peppers once while his wife was in the shower. He finished and went to adjust himself. Big, big mistake. His wife comes out from the shower and finds him in the kitchen balls-deep in the sour cream.

Yucateco's hab is my go-to everyday hot sauce.  Just made a hab sauce w/ pears, carrots, garlic, Worcestershire sauce, dark rum.  A little fruity, but a nice sweet before the heat.  Doesn't go w/ everything, but good on many dishes.

Oh hell yeah.  Sontava is a good one, too.

When I see a good bin of orange habaneros at the grocery (I think they have more character than most red ones)  I make my own batch of habanero sauce/salsa w/ the food processor.

All I need is a bunch of peppers, lots of garlic cloves, a big carrot (optional), cider vinegar and key lime juice (about equal parts), honey and a tiny bit of salt.  It keeps in my fridge indefinitely and is great spooned on burritos or spread around the top of a pizza before or after cooking.

You may be right about the peppers, though I've been able to grow scotch bonnets and jalapenos where pot wouldn't grow.  I just can not imagine that trucking in peppers would cost more than trying to do business in California, especially when their alternative is a state that does not allow medicaid for males.  Not to mention that you can practically have your mail delivered to your house by rail.

Not to be 'that guy' (damnit!), but after a few years of cutting up chilies, (jalapenos, habs, scotch bonnetts, etc), the burn, even in my eyes is just an annoying burn, not incapacitating.  Keep in mind, I do thoroughly wash my hands after cutting the peppers.

My Dad makes it, I grow most of the Peppers.


If you want some good pickles buy a jar and slice a habenrero into it.

Well, if the company does, in fact, move you'll be right and I'll be wrong. But being a local, and well versed on the story, I wouldn't recommend that you bet the farm on it.
Again - the "Texas Deal" isn't as great as it's represented to be by the Texas CoC. Whether or not people understand it, there are some distinct downsides to the race to the bottom - and they are going to emerge more prominently over time.
Indeed, when you think about it - deliberately populating your state with people and institutions that have come there because they don't wish to pay taxes or obey inconvenient laws just might lead to some negative consequences down the line.
Unless your idea of a good time is living in a state full of Cliven Bundys.

Wow, that's a toss-up.  In our house we usually have several bottles of both Cholula and Siracha (but Mrs. Renfros is still our go-to jarred salsa)

It has definitely earned a place in the pantry, but its usefulness is admittedly very limited, most things that can be solved by Tabasco can just as easily be solved by Franks, but there are exceptions.

As someone who spans the globe seeking all things hot sauce, I cannot get with some of the Tabasco hate.  It is my hot sauce "of that type" by choice over Crystal, Tapatio, Frank's, etc.  FWIW, this is the only sauce worthy of dousing a plate of biscuits and gravy.

Now, getting onto the wide wide world of every other hot sauce, I must say that so far my favorite is http://www.czimages.com/CZMemories/Photos/pepperad.htm  and he will mail you what you want.  Two different types of sauces in that Panama style of the "Inner Beauty" sauce you can't find anymore.

I once popped the lid off the blender to get an up close look if the still hot roasted habaneros had reached the consistency I wanted.  That was a, um, what's the word I'm looking for... mistake?


Meh - Once was making my own chili base with habenaro and thai peppers - opened the lid on the pot I was cooking it in the wrong way and got a face full of capsaicin-laced steam - Literally pepper spraying myself....

/about as bad as the CS chamber in basic.....

I make something similar, it's a habanero relish.

5-6 large habaneros, seeded
1 lb baby carrots
1 cup white wine vinegar
1 cup brown sugar
1 cup fresh OJ
1 pinch salt

Blend it all together, bring to a boil, then simmer for about two hours.  Chill in the fridge overnight for best taste.

The one I make is totally fresh, no cooking.  It's also wicked almost pure habanero.  Yours looks like something you can serve to actual rational humans.

There's a pepper called the datil that I need to get some plants of again that have an awesome taste.  These would suit your recipe perfect, as they have a sweet side to themselves compared to the habanero and scotch bonnet and are in the same family.

First stumbled upon it in about thirty years ago in Wisconsin, of all places (I don't think Wisconsin is exactly known is a hotbed of spicy Hispanic foods).  Ever since we've been ordering it regularly from the factory, four jars for twenty bucks, shipping included.  They've lately been stocking their products in grocery stores here in L.A., but mostly just the odd varieties, not the original hot salsa, so we continue to just order a box every month or so.

Which is common. Guess I've grown up on tapatio. I'm also a big siracha fan. Different foods.


Siracha on my Mexican food does not sound good. Tapatio on my hummus sounds horrid.

This. If you need to put this stuff on your food in order to get any pleasure from eating, you don't know how to cook.

It's really delicious, the flavor of the peppers really comes out without any competition, just a sweet background with a hot finish.  I sometimes swap the OJ for lime juice or a pear.
