Should be able to estimate velocity simply from height & range, assuming an initially horizontal trajectory.

V = sqrt(gR^2/2h)
where
g = 9.81 m/s^2
R = stream range in meters, let's say 1.25 meters
h = height, 34" inseam + shoes & etc. makes it about 0.9 meters

V = 2.3 meters/second

Accounting for decreased range & pressure and volume as a function of duration of thrust is left as an exercise for the reader.
