Agreed. I always thought that scene was powerful because (a) it was the film producer's favorite horse, and (b) the Corleones were silently sending a message: "We were right here while you slept. We could have killed you if we wanted, but we killed only your horse."

Leaving the head of some random horse that the recipient doesn't care about, out in some easily accessible area and not in his bedroom... well, that's still farking crazy, but it doesn't quite have the same effect.

A ute is a light utility vehicle - a small pickup, or one of those half-car/half-pickup things like Subaru used to make. You're seeing his ute in that photo you posted.

Depends on where the horse head came from.  If she "harvested" it from a random animal in a pasture, then yeah you probably don't want to fall asleep on her with anything sharp/edged in the house.

The crazy woman, crazy sex thing is really a phenomenon.  The nuttier they are the wilder the sex.  It's a dangerous edge to walk though.  You have to find the one who is unstable enough to fark your brains out but stable enough to not key your car, slash your tires, throw cinder blocks through your windows and threaten you with a knife.  I've had that experience, not fun.

In the book, the bed is a four poster and the head is mounted on one of finnials, staring at him.

Not only was the horse the producer's favorite, it was a champion racer that was about to be retired to stud. Lots of money lost in that.

Almost correct. Better to think of Aussie utes as being more like an El Camino than a Subaru. They are the Aussie bloke's favourite chariot, like a pickup truck is to anyone living in a red state in the US. They're just more car-shaped.

The ute in the photo is a Ford Falcon ute, comes in V6 or V8, as do their nemesis the Holden ute, the V8 'Maloo' version of which has the same 5.7L engine as a Corvette.

D'OH the ute in the photo is the Holden, not the Ford. Must pay more attention next time. It was the colour which threw me, it's a stock Ford colour.
