Well that, and plenty of beer.Building a new smoker, but here's a quick recipe:Fill a large stock pot halfway with water, and what would have been 1/4 of the way with beer.(Choice of beer is personal. Some use crappy lighter beer, like Bud. I like darker beers, e.g. Guinness, myself.)Do not turn on the stove top.Put the brats in the pot, no heat.Cut up 1 Sweet onion into rings, ad 4 cloves of fresh garlic, and put that in the pot.Leave for about 1-2 hours, while you prep your smoker. Use your favorite combination of wood: I like to mix apple and bourbon barrel chunks. Make sure it isn't too hot, maybe 180'-200', but is ready to begin smoking as soon as you put the brats on the there.Take the brats out of the pot, and now turn the stove on medium. Put the brats on the grill and smoke for about 15 minutes per side.After you take them inside, put them in the now hot water/onion/garlic mixture in the pot. Cook an additional 15 minutes or so (this does depend on the brat type) Don't overcook them.Take out the brats, and separately the onions.Buns, mustard, onions, enjoy. You should see a nice dark pink ring (the smoke ring) but there shouldn't be any raw meat at all.Watch out! Like my friend Jadzia, if they're done right, they squirt.
