As one who has studied color in college (illustration and photography) and use it to influence things in advertising today, I admire the photographers approach towards the subject.

When I was a youngster I used to make pancakes for breffis and started adding food coloring for kicks. Red was ok, green got me some glaring looks, blue was when dad yelled ENOUGH.

we were in San Francisco one Saturday and Heinz had set up a test group for that product and we were asked to participate so we did. I think they also had green catsup as well. anyway my kid was 6 at the time and she thought it was paint and refused to eat it. they still gave us $50. it tasted about the same as regular catsup but the colors were off putting.

The food doesn't look unappetizing because it's colored, it looks unappetizing because the colors aren't even real colors and it doesn't look like food.

For instance, cereal in orange juice or lemonade wont look unappetizing, even though it's bright orange or yellow. That "milk" looks like paint, that's why it looks disgusting.

The chicken looks like it's wearing a rubber suit, not like someone crushed up blueberries and rubbed it all over the skin of the chicken.

The purple hot fudge looks like someone dripped paint on pistachio ice cream. Check out the maraschino cherries. They are artificially dyed. Look at how reflective they are when compared to the paint. They aren't a perfect mirror like that purple paint is. Here's a fake purple food:

I would eat the ice cream and cereals but not the rest. Breakfast (except eggs and pig meat etc...) and desert can be any color because they are already heavily processed even if 100% "natural", but "real almost unprocessed" (from the garden/animal to the fire to the plate) food should look real.

Thing is, there are blue/purple tomatoes. Unlike blue corn or blue potatoes which you can find fairly easily they've never really taken off commercially, but they exist. So in principle at least, you could make purple ketchup that's that way naturally.
