I don't typically associate high pressure canisters with "whipped" cream. Whipped cream is just cream than has been beaten until aerated. Are these people trying to take shortcuts like the crappy cans of N2O infused shiat you can buy at the store?

Not surprised, really. Whipped cream chargers are pretty high-pressure. If a new dispenser has small crack or other flaws or if someone fills past the fill line it could break.

As a result a consumer watchdog is pushing the government to launch an urgent public education campaign.

Well that sounds like the appropriate way to handle things.  People should know up front that they are either going to get some sweet whipped cream or possibly lose an eye.  That way they will know what they are getting into.

Seltzer bottles also exist. Yes, you can make your own seltzer! The old-fashioned, heavy glass bottles with the carbonator/dispenser heads - I own & use one of those, too. Same technology.

Got to admit I'd never heard of a whipped cream maker either. Or can imagine any need for one. A bowl, whisk & cream always seems to be enough in my house. Maybe some sugar and/or vanilla occasionally.

They are so much better than the ones you buy at the store. You can make whipped cream in seconds and make it any flavor you want. They are also useful for rapid infusions. You can let your aclohol infuse with flavors over the course of a few days, or you can stick it all in one of these and get the same thing in a couple minutes. I recently made orangecello with mine. It took 2 minutes to get me the same flavor that I've gotten from 4 weeks of infusing. You can also put the alcohol of your choice in the cream and have alcohol-infused whipped cream. There is literally no reason to hate on these things, unless you are a luddite.

Absolutely. They just use flavorless N2O to aerate the cream instead of beating it. It also stores well in the fridge. I recently made some peppermint whipped cream to go on my hot chocolate. Sure, you can do that manually but this is just easier.

They're also great for making Culinary Foams/Espumas. I just made a foamed mango curry soup, a foamed coriander/mint condiment and a ten minute sweet black sesame cake.

How much flavorant/liter of alcohol can you use? I'm trying to make alcohol based flavor extracts and want to get as much as possible in as little alcohol as I can get away with.

I'm not sure of that at all. I used the zest of 2 oranges and slightly less than 250mL of Everclear(my dispenser is only 250mL) and the flavor was really good. I suppose you could put as much flavorant in as will fit and then add the alcohol
