Because God made them that way. There's even a whole part of the Bible where Adam names all the animals. Whoever wonders such a thing is just illiterate... but no less deserving of salvation. We should do our best to answer these sorts of obvious, everyday questions for them.

um Dogs and Wolves are a single species (in the sense that they interbreed)

They do not have a strict family tree, though you can sort of arrange the breeds into a tree on the basis of trait/gene inheritance. To classify mutts you really need an inheritance graph.

A more interesting question is which breeds have multiple ancestors? Are there cases where say a lap-dog was crossed with a wolf to generate a rat-dog?

I assume it involves either a chihuahua father finding a tired and/or trapped Rottweiler. The alternative is a hairless, barking dickmitten.
