As a former commercial fisherman, you sold the entire fish to the fish houses and only cut off the heads if you were selling directly to restaurants and filleting out the fish. This was because the best way to tell how fresh a fish was is to look at the eyes, and for a fish several days old the fishermen would cut off the heads to make it appear fresher. So the fish houses usally only bought the fish with the heads on it. Back in the 70's they would throw the heads into a bone barrel, but when the Vietnamese arrived in the 80's there was always one of them working in the fish houses who took them home with them. They wouldn't get the larger grouper heads though. They sold that directly to an oriental restaurant out of Houston.

If you filleted out the fish for the restaurants yourself, you put all the trim into a big stew pot and boiled it down, including the heads, then screened out the meat when it cooled. The meat near the bones is the sweetest meat of a fish and once deboned make for great eating. You put the bones in the compost heap, and then watered the plants with both the stock and the water you cleaned the pots with. Talk about green plants! There was almost no waste.

What?  Why "sick?"  I love whole fish with heads and buy them whenever possible.  The meat in the cheeks is very sweet.

Just, you know.  Always eat the eye first, so you don't have to feel it watching you while you devour the rest of it.
