And with little demand for fish byproducts worldwide, most heads, tails and carcasses are processed into livestock feed or farm fertilizer or thrown back into the sea.

It sounds like there is no problem here...  Turning fish heads into livestock feed is turning it into more food...

this is just another article that makes us feel bad because culturally we are not eating something we were not raised to eat.
yes, and if they made fish heads into something that looks like we eat now, and gave it an appealing new name, we would eat them.
that being said, most americans don't have to eat fish heads. but wait a while, as the human population keeps on growing, the economics will make sure all the fish is brought to port.
and this, go 4-5 days without food and that fish head on the grill is gonna smell pretty good.

As an Asian American, I would attest that the cheek is the only part of fish heads that is ever worth eating. Personally, I find the eyes to be disgusting. Can't say that I haven't met relatives/friends who freaking LOVE eating the eyes though.

Stupid article is stupid. If they're being used as livestock feed or fertilizer, they're being used to grow other food for humans to eat, so they really aren't being wasted. Even when throwing them back into the sea, fish and other sea life will eat them, which is good for the oceans ecosystem.

As a former commercial fisherman, you sold the entire fish to the fish houses and only cut off the heads if you were selling directly to restaurants and filleting out the fish. This was because the best way to tell how fresh a fish was is to look at the eyes, and for a fish several days old the fishermen would cut off the heads to make it appear fresher. So the fish houses usally only bought the fish with the heads on it. Back in the 70's they would throw the heads into a bone barrel, but when the Vietnamese arrived in the 80's there was always one of them working in the fish houses who took them home with them. They wouldn't get the larger grouper heads though. They sold that directly to an oriental restaurant out of Houston.

If you filleted out the fish for the restaurants yourself, you put all the trim into a big stew pot and boiled it down, including the heads, then screened out the meat when it cooled. The meat near the bones is the sweetest meat of a fish and once deboned make for great eating. You put the bones in the compost heap, and then watered the plants with both the stock and the water you cleaned the pots with. Talk about green plants! There was almost no waste.

I've eaten fish heads, as the result of working for a company where I was the only white guy among a bunch of east Asian folk.  Honestly, tastes exactly the same as the rest of the fish.  Save for the eyes.  Those are crunchy.

This is also true, though arguably even 200 years is generous.

Technically nothing is "wasted" in that sense, but the non-renewable resources we use to harvest biomass which is sent right back into the ecosystem are not coming back.  Those ARE wasted.
