Pulque is "the mildly sour, slightly slimy and gently fermented nectar of agave".  I like kombucha, so I think I'd give this a shot, if I could ever find it.

I wonder if the one they're drinking has excrement  in it...

I saw a clip on Televison or Univision about this a month or so ago.  It mentioned some of the mixes use excrement, not necessarily animal either, in the recipe.  My mummy dearest (who grew up in Mexico) confirmed said mention was not simply hyperbole.  Of course it varies not all of the pulque recipes use it.

That said, just because the poor drank it doesn't mean it's cool to copy them.

Don't worry, Mexican Hipsters will get to it soon and piss all over their country's own history and prior cultures by having that aguadulce as the new fad as soon as pulque becomes "played out".

She should learn it's not that Hipsters have a lack of knowledge about their history, in fact the opposite is true; they know about their history and exploit it as a new trend so they can be at the "forefront" of something they'll assume no one else will embrace and the Hipsters would then act as "more alternative than thou".

Aguamiel, compadre, not aguadulce. It tastes like a slice of heaven and is not *that* slimy, your old man probably drank it diluted. There is *nothing* about maguey that's not slimy except the worms, which are crunchy and taste very good and are expensive as hell.

CSB time: One of my uncles used to own a pulque-making ranch in Hidalgo northeast of Mexico City, He got the thing as payment for a debt just as we cousins hit our teenage years. I guess it was the 3rd World equivalent of having Busch as a last name; the only thing that kept me from drowning in one of those big fermentation tubs was that it took 2.5 hours to get there by bus and pulque truck. He sold it on 2 years later to our unending sorrow. So, no watered-down, mixed, week-old swill for me, thanks, which is what whining bartenders sell (and the reason pulque almost went extinct in Mexico City; you can't trust a pulqueria owner as far as you can throw him, and they all weigh 300 pounds)... Real pulque is thick like a good milkshake, tastes like kefir or ayran (or like a really great fruit shake when it's a curado) and, yes, it does give you a hangover... which you cure immediately with more pulque for breakfast, along with tacos de barbacoa cooked on-site from fresh lamb.

You are absolutely right, it's aguamiel. In my defense its been about 25 years since I visited the interior or Mexico with my grandfather.

It's the same trip I discovered the horrors of huichlacote. *hurk*

Huh, I've actually been to both pulquerias in TFA.  The first one was full of college kids, and the second was more of a hole in the wall place for locals.
