If you are deglazing a pan after braising beef and veggies for a winter stew, it's more than fine to use the good stuff. I like Maine Beer Co's "Mean Old Tom" for mine.

I was working in this restaurant when this d-bag kid was about to deglaze a pan with bourbon directly from the bottle instead of pouring it in a cup and tossing that in the hot pan.  I told him sometimes the flame travels up the spout and the bottle could explode right next to your head.  Maybe it was because I was almost right next to him, I like to think if I was across the room I would have allowed it.

I don't know if it is even possible to whoosh a bottle by pouring liquor onto a flame. The worst outcome would be for the whoosh to make extra liquor come out.

Um, yeah that doesn't happen.  Worst case scenario is a sudden but mild build-up in internal pressure, which causes more liquid to squirt out, which might cause an undue amount of liquid to catch fire.  But that whole "flame traveling up the stream and causing a massive internal explosion" thing is a myth.
