I had to do a paper on her (among others) very recently, as she was a speaker at Pop!Tech 2013, which is more or less a Ted knockoff. Agapakis said that this cheese isn't for eating, it's for thinking.

I think this was her idea of an art project.

I just recently saw a woman five a presentation about finding different yeast for sourdough starters at Ignite Phoenix, another Ted inspired event. If they ever got together, the least mentally appealing grilled cheese ever could finally come into existence.

Um... I'm pretty sure that some variety (or varieties) of cheese are already made from foot bacteria/fungi... of course nowadays they just use the cultures instead of actually using people's feet in the process...

That would be Limburger. The bacteria used is actually found on skin all over the body, including the feet and bellybutton.
