I think the Sriracha bubble is about to pop, and I feel bad for the Sriracha company - they were making a good product for a time long before foodies and hipsters 'discovered' them, but now it's the AMAZING NEW FLAVOR (tm) on Lay's Chips and Subway Sandwiches.  When something gets to that level of consumer saturation, it has just about run it's course.  Then those that dedicated website homages to the sauce will be the same ones that claim it's too 'pedestrian', and the company will suffer.

Am I the only one who isn't awestruck by bacon? I just don't get the fascination that the Internet has with it. I like prosciutto, so I'm not bothered by it being meat or whatever, but bacon doesn't do it for me. I mean, it's not bad, but...

Agreed. Adding heat for the sake of adding heat and nothing else is stupid. I'd prefer to have something milder with more flavor than something with no purpose other than to burn my face off.

Far too many places lose flavor as you go up the heat scale.  Pick your heat source by the flavor it adds, and then add more or less of it to get the right heat.  And if your source of flavor is hot... then maybe you get to grin and bear it, but you're doing so because there's awesome flavor there.  Personally I find habaneros have the best flavor of the common chillies, but far too many of the salsa's that use them focus on the heat and not the flavor. :(

/Experiment with making my own now... suggest against using a noonday onion in a habenero salsa... it's... odd.

I like the Caribbean super hits for both heat and flavor. Habs can be good too, just not as complex a flavor.

Also, Sriracha is awesome 'cause it's an actual sauce, like BBQ or ketchup. Not like Frank's or Tabasco, which are just spice-infused vinegar. And anyone who hates vinegar should still be able to add flavor (I said it, FLAVOR!) to their food.
