I'm with you on sriracha.  It's a nice enough sauce, but far from a universal condiment.  It's a bit too sweet for my tastes, but I like it with certain foods.

Bacon has a lot of flexibility, and while I agree with you it's being overused at the moment, it's base flavor profile of smokey, fatty, and salty can go with a lot of different dishes as an accent.

There will be something new in due time though.  My bets are on miso or ponzu becoming the next hip thing.

The next big thing is being a "negan," a term I just invented. Negans don't eat anything made of organic ingredients. They consume only water, salt, and freeze dried space ice cream made from synthetic milk.

More of a thick, cloyingly sweet, slightly garlicky, Franks, which some other random spices as well.

It doesn't have any of that fermented depth of flavor that Tabasco has, though it is more flavorful than most Louisiana style hot sauces.

Still though, the big flavor note I get from it is sweet, which is why I'm with you on Sambal Oelek, it's a far superior option.

Still, a lot of Asian condiments make use of some preservative that I can readily taste, which is off-putting.  It tastes like the preservative smell that somehow permeates most Asian grocery stores.  I don't know what it is, but I don't care for it.

I'll certainly agree on sriracha.  I can't stand that stuff, and one of the places I go has decided to start adding it to nearly everything.  I've had to specifically say, "No sriracha" on quite a few things that, a month or so ago, didn't have it, and I still have to send stuff back.

Don't get me wrong, I like other spicy foods; just not this crap.

Dunno, I never had it. I'd LIKE to like Cilantro, it just has this really outstanding taste that grates on me unless I'm using microscopic amounts of it. It's the same as hot sauce. I'd LIKE to like hot sauce, but for whatever reason, i just can't stand the taste. Maybe my tongue exists in some weird quantum state that can only be fixed by 3d printing... ;)

Hmm, I tried making that stuff at home once but fuzz grew on the peppers in the oil... Ewwww.

Well I have a sweet tooth, sambal oelek is quite sweet as well. When I go to the vietnamese place I use a 1:1 sambal:chicken ratio, which somehow impresses the really white guys at the office. It barely registers as hot for me.

Never heard of that. Some funky chili maybe. I make it all the time and it comes out fine. I periodically add chili and oil, and every couple months I start a new batch from scratch.

My wife and I love cilantro, my youngest is in the "tastes like soap" category which really makes things hard. At least she isn't allergic to it like a friend of ours. That would be really rough for us.
