Not to be a spoilsport, but a chocolate mousse doesn't seem like a particularly hard thing to scale up. You just need a bigger bowl to mix the ingredients, it's not like making the world's largest pizza or something where you have actual engineering challenges.

Dropped in to see if Lenny had been mentioned.  Well done, Sponge.  I was just there this summer.  I'm not a huge fan of their chocolate confections, but they have great ice cream.  Definitely worth the visit.
