Next to everyone declaring world peace, this is the best news ever.

Unless this is one of those jokes were they declare it to be healthy, only to declare it unhealthy the next week. Like they did with eggs. Then it's SCREW YOU TOO, SCIENCE!

It depends on what kind of saturated fat. And speaking of french fries: the switch to soybean oil in most fast food deep fryers (in an attempt to get rid of some of the bad fats) results in the production of toxic aldehydes when heated. Enjoy!

This article includes a nice video of Dr Malhotra discussing the issue of reducing saturated fats in the interest of lowering LDL, the different kinds of LDL (large and small sub-particle), which of them actually causes damage to heart arteries (small sub-particle), what dietary factors increase the level of those (carbohydrates & sugar, not saturated fat).

Yep.

Gained a whole lot of weight after switching jobs and traveling all the time. Cut out the fries, breads, chips, and other carbs, and focusing on as much meats and veggies I can get on the road, and I'm dropping the weight back off.

I don't really agree, necessarily.  I've known nutritionists and personal trainers who hand out advice that science has clearly demonstrated is sub-optimal.  ANY nutritional advice that involves people putting down the microwave pizza and Wonder Bread and exercising is going to be beneficial.  But beyond that, I haven't noticed that their advice is any more effective or scientifically sound.  Many still support the low-fat bandwagon, which has been repeatedly proven to be less effective for years and years now.

Ugh, but that stuff makes an awful stink if you use it for any high temperature cooking.  It smells like someone horribly burnt a pan full of almonds.
Also, there are many things I wouldn't necessarily want coconut taste or smell on.  I've used it to great effect for light sauteing on veggies for curry (it smells awesome), but I'd never use it for a steak or a stir-fry.

In regard to the headline, fries are generally fried in vegetable oil, which is generally not saturated.

Now fries fried in duck fat... now we're talking.

Which is why most food processing (most specifically frying) is simply not healthy.

Vegetable fats are not inherently unhealthy. Human cooking is.
