Ketchup (or catsup if you prefer) has it's place.  However, salsa in it's many varied forms is much more versatile.

While I think Drudge is pretty execrable, Raw Story (and the ThinkProgress article they linked to) could at least have provided ONE quote from Drudge illustrating what they were complaining about. Substance-free article is free of substance.

Thing is, ketchup back in the day had as many varieties and root ingredients as salsa does today.  What we primarily think of, tomato ketchup, is definitely American.


/I prefer the escaveche/escabeche/caveach/ketchup theory, it makes more sense based on the ingredients.

Yup, ketchup is Chinese in origin. Commonly used as an ingredient in sweet and sour sauce.

1 tsp salt
1/4 tsp celery salt (fine-ground if you can find it)
1/2 tsp paprika
1/4 tsp dry mustard
1/4 tsp garlic powder
1/8 tsp ground clove
1/8 tsp nutmeg

Mix everything and store in the refrigerator for up to 8 weeks.

I'm usually more of a hot sauce guy than salsa, but when you want it you REALLY want it.  I prefer pico de gallo, but with extra lime juice and the cilantro dialed WAY down.

/Not one of those "cilantro = soap" folks, just think it's one of the most overused herbs in the repertoire

It's all about volume. Sewing sizes of ketchup are much smaller than salsa, therfore more of it is sold.

Actually, no I didn't.  When coming up with this one I originally put allspice in it, since most scratch recipes I was researching called for it.  Any detectable amount at all gave a faint air of stale pumpkin pie flavor, so I dropped it.

I accidentally grabbed the smoked paprika once when making this. It's not something I'd do on a regular basis, but damn if it didn't improve my burger.
