Angus is really just the result of good marketing. Lots of other breeds are in the same ballpark price-wise, and taste better (Limousin, for example).

For labeling purposes, is "angus" even legally defined?  I believe I heard the term was used quite broadly.

Nope. Any predominately black beef cattle will be dubbed 'angus'. There are registered angus breeders certified by the breed association,but the processors and retailers don't bother checking.

It's probably still way more accurate than "kobe".

Some folks like Hereford better . I say variety is good. But yeah, its all about the marketing.
