Guess that must be cheddar, cause swiss don't shake like that.

The chart says we average 2 pounds a month.  My household goes through that amount in just cheddar (4 people but still).  Then there's the Havarti and Gouda and Brie and cream cheese and blue cheese and Fontina and Feta and Gorgonzola, not to mention colby and jack.

It's making me hungry just thinking about it.

I thought to myself, "a little fermented curd will do the trick," so, I curtailed my Walpoling activites, sallied forth, and infiltrated your place of purveyance to negotiate the vending of some cheesy comestibles!

Consider the Taco Bell steak quesadilla, with cheddar, pepper jack, mozzarella and a creamy sauce. "The item used an average of eight times more cheese than other items on their menu,"

Explains why the quesdilla is the only edible thing on that menu.

I'm not convinced cheese is of any cardiovascular consequence.
*checks it out on Wikipedia

Yup:

A review of the medical literature published in 2012 noted that: "Cheese consumption is the leading contributor of SF (saturated fat) in the U.S. diet, and therefore would be predicted to increase LDL-C (LDL cholesterol) and consequently increase the risk of CVD (cardiovascular disease)." It found that: "Based on results from numerous prospective observational studies and meta-analyses, most, but not all, have shown no association and in some cases an inverse relationship between the intake of milk fat containing dairy products and the risk of CVD, CHD (coronary heart disease), and stroke. A limited number of prospective cohort studies found no significant association between the intake of total full-fat dairy products and the risk of CHD or stroke....Most clinical studies showed that full-fat natural cheese, a highly fermented product, significantly lowers LDL-C compared with butter intake of equal total fat and saturated fat content."

for those who don't know, the center for science in the public interest is about as credible as bigfoot researchers,  holocaust deniers, or PETA. It's not take anything they say with a grain of salt, it's assume anything they say it pure bullshiat.

Where's my cheese snobs at!? I'm a little disappointed to not even see popular faves like Eppoisses, Humboldt Fog, Saint André or Explorateur. Let alone anything really adventurous. Instead we have some cheddar and bleu fans. Son I am disappoint.

I picked up a heel of lovely smoked mozza, a goodly chunk of parmesiano reggiano, and an thrice award winning sharp aged grizzly gouda yesterday.  All locally produced.

Is that cheese snobby enough for you?
