In Kansas you can hunt Sandhill Cranes as part of the migratory bird season. According to my Kansan (Kansasian?) grandfather, they are delicious. I told my then girlfriend that I was interesting in trying some, and it's funny that they just walk around in central Florida, where you can't hunt them. My girlfriend responded with, "Alex! They mate for life!" To which I responded that I guess I'm eating two.

I came here to mention sandhill cranes as well. Your Kansan grandfather is quite correct-- sandhill crane has a delicious, succulent, steak-like flavor and is often referred to as "ribeye of the sky". Keep it a secret!
