Their mistake was thawing the turkey. Liquid water in a deep-fryer is bad. That's why you make sure the bird is frozen solid before you drop it in.

They don't come out looking as much like a photo from Goumet magazine, but if you cook the turkey breast down in the oven the breast meat comes out much, much better. Kind of self-basting if you will.
