He really should learn to cook his food. And frankly pulling snails just out of the river sounds like a bad idea. I catch helix aspersa by me for fresh escargot, really the only way to get it. Those guys have a two week quarantine time to ensure there is nothing toxic in their systems and to flush them out.

This. And let's not forget perch, smelt, bluegill (really!) and, my personal favorite, lake whitefish. Oh, and lake chub. Smoked.

I really don't understand the freshwater vs. saltwater thing. The ocean has living things in it, including (yes) bacteria, protists and parasites. It's not sterile. If it were, you wouldn't have much luck fishing there in the first place...
