Based on the number of cupcake shops that have closed down around here in the last year, I thought that was the case.

One of my wife's best friends owns and operates her own wildly successful bakery. She absolutely refuses to bake and sell cupcakes. $12,000 wedding cake? Sure thing. But no cupcakes.

FTA:   If you know your way around the kitchen, you can probably whip up a batch in just a couple of hours.

Seriously?  A couple of hours?  5 minutes to assemble, 12 minutes to bake, make frosting while cooling, decorate.  In two hours you can make two batches of cupcakes!

Interesting, in just the past two years we have had four dedicated cupcake shops open, ten bakeries ramp up their supply, and about thirty home businesses start up. The shops make the shiattiest cupcakes by far. They are so dry and nasty tasting. I make 1000x better cupcakes at home. They just don't look as pretty because I don't have piping supplies.

I guess it's a matter of me being in San Francisco. There were a number of cupcake shops that opened about 3-4 years ago, and about half of them have closed down, or are in the process of doing so.

Almost all of those "tips" apply to all baking. And the one that says "don't over beat" is wrong if you're making cupcakes out of a box, a la Betty Crocker. It clearly says on the box to whip 'em for 2 minutes. If you don't, they won't be light and fluffy. It takes time for the chemicals in those mixes to activate or something.

Or better yet, cook from scratch, then don't over mix.

1) Haha fark you.  Frosting made with cold butter tastes different from frosting made with room temperature butter.  Sometimes you want that difference, but usually you don't.

2&3) Betty Crocker always, Pillsbury never.  Ever.

4) Your choice of instrument is slow, messy & wasteful.  I use a measuring cup with a spout, and the spatula from mixing the batter, the better to waste nothing at all.

5) well, duh

7) If you're really this unfamiliar with your own kitchen, just purchase cupcakes already.

8) This little button with a light bulb on it conveniently eliminates the need to open that door.

9) Burnt cupcakes must be for viking funerals, right?

10) It's hard to make the second batch when the first batch is still there, yes.

11) It's actually a sin.  A SIN.
