It's actually more than that.  In one variation, the color shifts back and forth before final equilibrium.  The prof will create the solution, then set it down and continue the lecture, when the solution suddenly changes color, then back again.  Crowd gasps, hubbub rises, prof says "what?", looks at solution (original color), continues lecture, switch happens again, etc.  Prof uses as an intro to autocatalysis.
