The really amazing part to me is that we went from a people who believed in dragons to putting a man on the moon in less than 500 years. When you consider how long man has walked this rock, that's kind of amazing.

Latin is fairly insensitive to word order; it mostly uses case to indicate parts of speech, which lets you reorder phrases to suit the ear.

Actually, my understanding is that they didn't  really believe in dragons back then either; the phrase "Here be dragons" meant, pretty much, "We don't know what the fark is here, and it might be really bad, so if you're crazy enough to go here, watch your ass."

Also, the verb 'to be' doesn't follow the usual convention.  You are right that the looser-than-English default is Subject object verb when the verb is not a variant of 'is'.  IIRC, it is also like English in that the object is not in the accusative/objective form, so "it is he," not "it is him"

HIC SVNT DRACONES, here are dragons - correct
DRACONES AURUM AMANT, dragons love gold - correct

That was known to be true for a long time. Eratosthenes did a pretty good job of calculating the Earth's circumference and axial tilt around 200 BC.
