So do you need to use Yukon Gold so they will hold together better? Maybe add an egg to also bind it a little better?  It seems they could easily fall apart into mush if not done right.

Scrawny little wrinkled slips of paper.  I've found a couple places where I live that serve up 1/4" thick slabs of bacon on their burgers.  It's hard to go back after that.

It's smoked fat (and skin) with trace amounts of meat and a thick layer of paprika, sometimes with garlic. My father used to eat it with onion and bread. I liked it with mustard and bread when I was a child. Used to be a popular dish in Hungary before McDonald's entered the business.

Eh, I'm alright with it. It's really not the greatest food ever. To me, anyway. I don't get the hype.
