Why wouldn't we just use something like a spark plug nowadays? Keeping a flame on all the time to make up for leaky gaskets seems like a waste of natural gas.

Well, assuming you're living in the house, you are using hot water pretty frequently (washing hands, etc), so it's not that wasteful.

Also, my hot water heater uses no electricity at all - I guess it has a bimetallic strip to trigger it - which was AWESOME when we didn't have power for three days after Sandy.
